Their lively exuberance, ready to break free as soon as the bottle is opened, comes
from the refermentation that takes place inside an autoclave or in the bottle: the long
or short amount of contact with the yeast enriches the spumante with a fine beading, a
blend of aromas and typical flavours. Within the Ruinello range of spumante wines
the Brut Metodo Classico stands out. This is obtained from careful making of white
wine from the Pinot Nero grapes of the Oltrepo Pavese and Chardonnay with a long
refermentation in the bottle of at least 24 months, which endows it with an elegant
