The grapes
100% Pinot Nero cultivated “a guyout” and harvested in the first ten days of
September.
Winemaking
White with immediate separation of the must from the pomace by means of a gentle
pressing followed by decanting of the must and then fermentation at a controlled
temperature. Following this, the wine is decanted, filtered and stored in tanks
Bottling
After refermentation in the autoclave, where it stays for 4 to 6 months, the wine is
microfiltered and bottled immediately.
Organoleptic characteristics
In the glass it is sparkling quite strong straw-yellow in colour, bright and fairly
viscous. To the nose it has delicate aromas with hints of peach and bread crusts. On
the palate it is persistent, elegant, fresh.
Accompaniments
It is suitable for fish-based main courses.
Technical notes
The wine has an effective alcohol content of 11.5% vol and should be served in white
burgundy-type glasses at a temperature of 8°C -10°C. Bottles should be stored
horizontally away from light and in a very cool place (refrigerated if possible). As it
is a young white wine, it is best drunk within a year.
