The grapes
This is a grape blend made up of 60% Croatina, 25% Barbera and 15% Rara Grape
cultivated “a guyout” in our vineyards at Montescano and harvested in the first ten
days of October
Winemaking
Red wine made by removing the stalks and crushing the grapes.
The must obtained, with skins and pips, is put to ferment in tanks at a controlled
temperature for about 10/15 days. Finally it is drained, repeatedly decanted, then
filtered and kept in reservoirs until it is ready to be used.
Ageing
The maturation period goes from eight to twelve months in vitrified concrete tanks.
Bottling
After light refermentation in the autoclave to make it lively, the wine is microfiltered
and bottled.
Organoleptic characteristics
In the glass it is lively with a very intense bright ruby-red colour. To the nose it is
intense, heady, with hints of red fruit jam and a slight hint of spices. On the palate it
is dry, decisive, well bodied.
Accompaniments
It is suitable with game, roasts, elaborate meat dishes
Technical notes
The wine has an effective alcohol content of 12.5-13% vol and should be served in
burgundy glasses at a temperature of 18°C. Bottles should be stored horizontally
away from light and in a cool place. It is a wine that may be left for 24-36 months
before drinking.
