Sparkling
The grapes
100% Croatina, cultivated “a guyout” and harvested in the first ten days of October.
Winemaking
Red wine made by removing stalks and crushing the grapes. The must obtained, with
skins and pips, is put to ferment in tanks at a controlled temperature for about 8/10
days. Finally it is drained, repeatedly decanted, then filtered and kept in tanks until it
is ready to be used.
Bottling
After refermentation in the autoclave, the wine is microfiltered and bottled
immediately.
Organoleptic characteristics
In the glass it is sparkling, ruby-red in colour but full of violet hues, bright, fairly
sticky. To the nose it is fruity, fine, intense with pleasant reminders of small fruits and
flowers. On the palate it has a strong body, not too much tannin with long aromatic
persistence.
Accompaniments
It can accompany cured meats, tasty first courses, boiled meats and is excellent with
semi-mature cheeses
Technical notes
The wine has an alcohol content of 12.5% vol and should be served in burgundy-type
glasses at a temperature of 16°-18°C. Bottles should be stored horizontally away from
light and in a cool place. As it is a vintage sparkling wine, it is best drunk within two
years.
