The grapes
100% Croatina, cultivated “a guyout” and harvested in the first ten days of October.

Winemaking
Red wine made by removing the stalks and crushing the grapes. The must obtained, with skins and pips, is put to ferment in tanks at a controlled temperature for about 3/4 days. It is drained, then filtered and kept amabile in cooled tanks until it is ready to be used.

Bottling
After refermentation in the autoclave, the wine is microfiltered and bottled immediately.

Organoleptic characteristics
In the glass it is sparkling, ruby-red in colour but full of violet hues, bright, fairly sticky. To the nose it is fruity, fine, intense with pleasant reminders of small fruits and flowers. On the palate it is pleasant, intense, rounded.

Accompaniments
It may easily accompany fresh cheeses or savoury hors d’oeuvres.

Technical notes
The wine has an alcohol content of 9.5% vol and a sugar residue of 30-50 g/l. It should be served in balloon-style burgundy glasses at a temperature of 16°-18°C. Bottles should be stored horizontally away from light and in a cool place. As it is a vintage sparkling wine, it is best drunk within two years.
