Sparkling
The grapes
100% Barbera cultivated “a guyout” and harvested at the end of September.
Winemaking
Red wine made by removing stalks and crushing the grapes. The must obtained, with
skins and pips, is put to ferment in tanks at a controlled temperature for about 8/10
days. Finally it is drained, repeatedly decanted, then filtered and kept in tanks until it
is ready to be used.
Bottling
After refermentation in the autoclave, the wine is microfiltered and bottled
immediately.
Organoleptic characteristics
In the glass it is sparkling, light ruby-red in colour, bright. To the nose it presents an
intense perfume of fruit and headiness.
On the palate it has a strong body, slightly acidic with reminders of forest fruits.
Accompaniments
It can accompany ravioli, grilled meat, hunter’s chicken, semi-mature cheeses.
Technical notes
The wine has an alcohol content of 12% vol and hould be served in burgundy-type
glasses at a temperature of 16°-18°C. Bottles should be stored horizontally away from
light and in a cool place. As it is a vintage sparkling wine, it is best drunk within two
years.
