Pinot Grigio
The grapes
100% Pinot Grigio cultivated “a goyout” and arvested in the first ten days of
September.
Winemaking
The grapes, selected at the moment of the harvest are then stemmed and crushed.
The must that is obtained, with skins and pips, then undergoes cold maceration for 12
hours. The solid part is then separated from the liquid part, which is placed in small
wooden barrels to ferment. When the fermentation has finished, it is decanted and left
until the following spring. It is then decanted and stored in reservoirs.
Bottling
The wine is microfiltered and bottled.
Organoleptic characteristics
In the glass it is still, straw-yellow in colour with golden highlights. To the nose there
are hints of ripe fruit and a trace of vanilla. On the palate it is alanced and
harmonious.
Accompaniments.
Ideal with hors d’oeuvres, elegant and fish-based dishes.
Technical notes
The wine has an effective alcohol content of 12% vol and should be served in light
white wine glasses at a temperature of 16°C. Bottles should be stored horizontally
away from light and in a cool place.
Although it is a white wine, it may be kept for 12-18 months before consumption.
