Red wine
The grapes
100% clone Pinot Nero suitable for red wine cultivated “a guyout” in our vineyards at Santa Maria della Versa and harvested in the second ten days of September.
Winemaking
The grapes, selected at the moment of the harvest are then stemmed and crushed.
The must that is obtained, with skins and pips, is put to ferment to a red wine in tanks
at a controlled temperature for about 10/15 days.
Following this, the wine is drained, repeatedly decanted, then filtered and stored reservoirs for a year.
Ageing
During the maturation time it stays in small wooden barrels for a year and in bottles
for six months.
Bottling
The wine is bottled as it is.
Organoleptic characteristics
In the glass it is still, deep ruby-red in colour with orange hues, bright and fairly
sticky. To the nose it is very elegant, intense, crisp, spicy with traces of dry flowers.
On the palate it is well bodied, warm and lingering.
Accompaniments
It accompanies mature cheeses, game birds.
Technical notes
The wine has an effective alcohol content of 13% vol and should be served in
bordeaux grand cru type glasses at a temperature of 18°C. It should be opened at least
an hour before drinking to enhance all its characteristics.
Bottles should be stored horizontally away from light and in a cool place. It is a wine
that may be kept for 24-36 months before drinking.
