Croatina
The grapes
100% Croatina cultivated “a guyout” in our vineyards and harvested in the first ten
days of October.
Winemaking
The grapes that are chosen at the moment of the harvest are placed whole in a
reservoir that is saturated with carbon dioxide for at least 10/15 days. At the end the
grapes are removed and pressed. The must, without pomace, is placed in tanks where
the fermentation is completed
Bottling
As this is a vin nouveau, bottling usually takes place during the last week of October
and it goes on sale after 6 November
Organoleptic characteristics
In the glass it is ruby-red in colour with violet reflections
It is fruity, delicate and persistent to the nose.
It is smooth and fresh on the palate.
Accompaniments
Suggested typical autumnal dishes: cooked pork sausage with mashed potato, roast
chestnuts, soup with pulses, mushrooms.
Technical notes
The wine has an alcohol content of 12% vol and should be served in burgundy-type
glasses at a temperature of 16°-18°C. As it is a vin nouveau it is best consumed
within 6/8 months.
