The grapes
100% Moscato cultivated “a guyout” in the town of Volpara and harvested in the
second ten days of September
Winemaking
The grapes are stemmed and the must, together with the skins, is cold macerated for
24 hours in order to extract the majority of the aromas without allowing fermentation
to start. Then there is separation of the pomace from the must, which is decanted and
fermented at a controlled temperature.
When the effective alcohol content reaches 5% the must-wine is cooled, filtered and
kept in cooled tanks at -1/0°C so it stays sweet.
Bottling
After refermentation in the autoclave, the wine is microfiltered and bottled
immediately.
Organoleptic characteristics
In the glass it is sparkling, straw-yellow in colour, strong with bright golden
reflections and is fairly sticky. Its aroma is intense, persistent, very aromatic. On the
palate it is sweet and full.

Ideal with creamy and dry desserts
Technical notes
The wine has an alcohol content of 5.5% vol with a sugar residue of 100-120 g/l and
should be served in sweet white wine glasses at a temperature of 8°C. Bottles should
be stored horizontally away from light and in a very cool place (refrigerated if
possible). As it is an aromatic wine, it is best drunk within 6/8 months.
