Malvasia
Sparkling
The grapes
100% Malvasia cultivated “a guyout” and harvested in the second ten days of
September.
Winemaking
The grapes are stemmed and the must, together with the skins, is cold macerated for
24 hours in order to extract the majority of the aromas without allowing fermentation
to start. Then there is separation of the pomace from the must, which is decanted and
fermented at a controlled temperature. When the fermentation is almost complete,
10/15 (g/l of sugar) is decanted, filtered and kept at a low temperature (2/4°C).
Bottling
After refermentation in the autoclave, the wine is microfiltered and bottled
immediately.
Organoleptic characteristics
In the glass it is sparkling, yellow in colour and fairly viscous. To the nose it is
aromatic, fragrant, intense with strong hints of fruit and a delicate hint of almond. On
the palate it is smooth, well-bodied, balanced.
Accompaniments
Ideal as an aperitif or drunk on its own.
Technical notes
The wine has an alcohol content of 11.5% vol and should be served in white
burgundy-type glasses at a temperature of 8°C. Bottles should be stored horizontally
away from light and in a very cool place (refrigerated if possible). As it is an aromatic
wine, it is best drunk within 6/8 months.
